Free of flour, sugar and eggs, these brownies don’t even require an oven
200g (2 cups) whole walnuts
100g (1 cup) raw cacao powder
Pinch of salt
625ml (2 cups) pitted dates
150g (1 cup) raw unsalted almonds, roughly chopped
Place the walnuts in a food processor and blend until finely ground.
Add the cacao and salt and pulse to combine.
Add the dates one at a time through the feed tube of the food processor while the machine is running.
You should end up with a mixture the texture of cake crumbs that sticks when pressed together. If not sticky enough, add more dates.
Combine the walnut mixture with the chopped almonds and press into a square pan lined with greaseproof paper.
Place in the fridge or freezer until well chilled and easy to cut.
Slice and store in an airtight container.
