4 large ripe bananas (flavour is better if really ripe), mashed
150g ( cup) white sugar
1 extra-large egg
80g ( cup) butter, melted
180g (1 cups) cake flour
5ml (1 tsp) baking powder
5ml (1 tsp) bicarbonate of soda
Pinch of salt
30ml (2 tbsp) caster sugar
2.5ml ( tsp) cinnamon


Mix bananas, sugar, egg and butter in a bowl. Sift flour, baking powder, bicarb and salt into a separate bowl, then add to banana mixture and mix lightly till just combined. Spoon mixture into greased or sprayed muffin pans and bake in a preheated oven at 180°C for 20 minutes. Cool for5 minutes in the pan, then turn out onto a cooling rack. Combine caster sugar and cinnamon and sprinkle over muffins while warm. Cool completely before storing in an airtight container, or serve warm with butter.
